Grilled octopus with potato and olive oil emulsion
Ingredients for 4 people
FOR OCTOPUS
4 octopus legs
Extra virgin olive oil
Lemon
FOR THE POTATO AND OLIVE OIL EMULSION
½ kg. of potatoes
Sea salt
Cumin
1/8 l. of extra virgin olive oil
1 tablespoon almond oil
Salt
Ezpelette peppers
1 tablespoon fresh chives
FURTHER
Green or white asparagus
Preparation
OCTOPUS
Cook the octopus legs and marinate for a few hours in olive oil and lemon. Brown them for a few minutes on the grill.
POTATO AND OLIVE OIL EMULSION
Cook the potatoes with sea salt and cumin. Mash the potatoes and the rest of the ingredients.
Finish and presentation
Arrange a base of green or white asparagus, place the octopus on top and around it the potato and olive oil emulsion.
