Recipe with olive oil

Chocolate turbante filled with nougat mousse and olive oil ice cream

Ingredients

FOR THE CHOCOLATE TURBAN
200 gr. chocolate
300 gr. of soft nougat
½ l. of semi-whipped cream
4 egg yolks
100 gr. sugar
0,5 dl. of water

FOR THE OLIVE OIL ICE CREAM
½ l. of milk
125 gr. egg yolks
150 gr. sugar
100 gr. of extra virgin olive oil

Preparation

CHOCOLATE TURBAN
Make cylindrical moulds out of acetate paper. Melt the chocolate, spread a thin layer over them and leave to cool.
Crush the nougat, mix the water with the sugar and boil for 2 minutes. Add the egg yolks and whisk. Once whipped, add the nougat and finally the semi-whipped cream.

OLIVE OIL ICE CREAM
Make a crème anglaise with the egg yolks, milk and sugar and leave to cool. Put in the fridge and, before finishing, add the olive oil.

Finish and presentation

Unmould the chocolate turban filled with the nougat mousse in the centre of each plate and place a scoop of olive oil ice cream on top.
Optionally, it can be decorated with a few strands of caramel and a mint leaf.
