Recipe with olive oil
Rosemary-flavoured hake with almond oils
Ingredients for 4 people
FOR THE HAKE
4 clean hake fillets weighing 230 gr.
1 onion
3 cloves of finely chopped garlic
1 sprig of rosemary
1 bay leaf
1 small bunch of parsley
1 spoonful of flour
Extra virgin olive oil
¼ l. of water
100 gr. of onion
100 gr. of carrot
100 gr. of green pepper
100 gr. of courgette
100 gr. of roast almonds
50 gr. of cheese
1 egg
FOR THE ALMOND OILS
50 gr. of roast almonds
2 dl. of extra virgin olive oil
½ dl. of sherry vinegar
Salt and ground white pepper
Preparation
Finely dice the onion, the carrot, the green pepper, the courgette and the cheese. Dip all these ingredients and the almonds in flour and egg and then fry.
Make a green sauce with the onion, the garlic, the parsley and the flour, flavouring with rosemary and bay leaf. Strain the hake and cook it in this sauce. Prepare the almond oils by mixing the virgin olive oil, the sherry vinegar and the crushed almonds. Season with salt and pepper.
Finish and presentation
Arrange the cooked hake on a plate, cover with the almond oil sauce and place the fried vegetables to one side.
